A distillery is an installation used for distillation. It is where people produce drinks, especially distilled beverages, through distilling.
Distillation is the process of separating the components of a mixture. Different evaporation points allow for the separation of substances by heating.
Distillery in Australia
Australia has around 210 listed distilleries, showing a significant increase per year. Australian whiskey is the most produced in this country. The country has its Australian Distillers Association. It unites and helps them grow a healthier and more productive spirits industry.
The Australian Distilling Industry is one of the fastest-growing in the world. It is also one of the most diverse, having a roster that includes single malt, rye whiskey, blended whiskey, gin, vodka, rum, and other spirits.
Distillery breakdown per state
The two states with the most distilleries are Victoria and New South Wales, having sixty-nine distilleries each. Other places also have several distilleries. Tasmania has fifty-three, and Queensland has thirty-two. South Australia has thirty-one, while Western Australia has thirty. And lastly, Australian Capital Territory has four active distilleries.
The island state of Tasmania has Australia’s largest concentration of whiskey distilleries. These distilleries are more famous in other parts of the world than in their own country. They are small producers, compared to the different parts of the world.

Australian distilleries back then
In 2014, there were only nine whiskey distilleries in Tasmania. After that, there was a boom in distilling both within Tasmania and throughout the whole country. The number of their distilleries rose to 31, with more planned in the next few years. In 2014, Sullivan’s Cove received the title as the “World’s Best Single Malt Whisky” by the World Whiskies Award. It was the first time a distillery outside Scotland or Japan won the award.
There are other well-known distilleries in Tasmania. These are Lark, Nant, Hellyers Road, McHenry, Belgrove, and Overeem. Lark, founded back in 1992, is the oldest distillery in the state. The second oldest is Sullivan’s Cove, established in 1994.
In the late 2010s, Belgrove started producing Rye Whisky. It uses grains that are grown on-site. Mostly using rye, but also includes barley, wheat, and spelt. Belgrove won the award “Icons of Whisky Australia Craft Producer of the Year 2019” from Whisky Magazine.
Another notable Australian distillery is the Great Southern Distilling Company. It makes Limeburners single malt in Albany, Western Australia. Wild Swan Distilling Company in Henley Brook, Western Australia, is also a famous one, as well as Whipper Distillery in East Perth. Loch Brewery & Distillery in Loch and Timboon Railway Shed Distillery in Timboon Southwest Victoria are also worth checking out.
